Freezing procedure: Freeze strawberries on the day they are harvested for best quality. To maintain quality, select berries with fresh sweet flavor, deep uniform color, and firm texture. Frozen berries keep optimal flavor and consistency if they are frozen rapidly . To ensure a quick freeze, freeze only about 2 pounds of berries per cubic ft. of freezer capacity per day. To make a sugar pack use 2/3 cup sugar per quart of fruit and fill pint or quart freezer bags to a level 3-4 inches from top, squeeze out air leaving 1 inch of headspace and seal. For a pack without sugar, place the unhulled, whole berries in a single layer on a flat tray(cookie sheet). Once frozen firm, they can then be placed in freezer bags.
